提起马来西亚菜, 首先就会想到肉骨茶(Bak Kut Teh). 肉骨茶是新马著名的地道佳肴, 闻名于东南亚, 也是马来西亚的骄傲. 肉骨茶虽有茶字, 却不是茶, 它有名贵中药材, 所以它是道道地地的中药材排骨汤, 再加上多种热带香料, 很符合现代人的美味药膳, 从营养角度来说, 肉骨茶有去湿, 旺血, 补气润肺, 滋补养颜的功效, 男女皆宜的补品.

肉骨茶是马来西亚著名的地道佳肴, 闻名于东南亚, 也是马来西亚人的骄傲. 说来这人间美味, 可是见证了南来的过番客的辛酸史. 话说当时南移的华人来到南洋多以出卖劳力为生, 生活相当辛苦, 肉骨茶便是有位小饭用中医师配合了多种药材和南洋盛产的胡椒配以猪肉骨熬成的汤混合白饭便宜卖给苦力吃以增加他们的体力. 经后人的改良和演变, 加上生活逐渐优渥, 肉骨茶以从供苦力饱肚的“粗茶淡饭”变成了民间的“上等菜”.

烹调方式

可做生煲, 干肉骨茶,火锅汤底(每包4-6人享用)

材料:1包顺康肉骨茶,冬菇(50g),排骨(500g),半肥瘦猪肉(500g),蒜米(大2粒),生抽(2匙),水量(3lite)

小贴士: 原粒蒜头不需剥皮, 洗净放入一起炖煮即可.

烹饪步骤
1. 把肉类用热水滚烫,水不要了(可以帮助去腥)
2. 冬菇浸泡2小时(可添加面粉,盐让冬菇内脏物排出)
3. 准备3lite水,等待沸腾后把全部材料放进
4. 大火煲1小时,小火煲1小时
5. 最后加上生抽(2匙)或盐调味即可。

How to cook
  1. Rinse meat.
  2. When water is boiled, put in meat and Sung Khong Bah Kut Teh and use medium heat to cook for 30 minutes. Add in soya sauce, oyster sauce, MSG and salt until meat is fully cooked.
  3. Add pepper before serving.

Preparation: 1pack of Sung Khong Bah Kut Teh, 1 kg meats, 1 spoon of black soya sauce, 2 spoons of light soya sauce, 1 spoon of oyster sauce, 10 bowls (1.5 litre) of water, Salt.

Tips: The longer the preservation, the better the quality and the better the taste. This is because the soluble protein contained in Lu Wei Teh and other ingredients more and more sake.
